Ingredients:
- 1.5 kg whole chicken (well washed)
- 1.5 tsp vinegar (or juice of one lemon)
- 0.5 tsp salt
- 150 grams yogurt
- 6 green chilies (ground)
- 2 tbsp garlic-ginger paste
- 0.5 tbsp turmeric
- 1 tbsp garam masala
- 0.5 tbsp black pepper powder
- 2 tbsp coriander powder
- 1.5 tbsp cumin powder
- 1 tbsp red chili powder (to taste)
- A pinch of red food color
- 2 tbsp cornflour (or one egg)
- 2-3 tbsp oil
Method:
- Prepare the Chicken:
- Wash the chicken thoroughly.
- Make deep cuts in the chicken so the spices can penetrate well.
- Vinegar and Salt Solution:
- Mix 1.5 tsp vinegar and 0.5 tsp salt in a bowl.
- Soak the chicken in this solution for 20 minutes. Flip the chicken after 10 minutes.
- Prepare the Marinade:
- In a bowl, mix yogurt, ground green chilies, salt, garlic-ginger paste, turmeric, garam masala, black pepper powder, coriander powder, cumin powder, red chili powder, red food color, cornflour, and oil.
- Remove the chicken from the vinegar solution and coat it well with this marinade.
- Refrigerate for 1 hour. If you have time, marinate for 4-5 hours or overnight.
- Steam:
- Add a glass of water to the idli steamer.
- Place the chicken on the steaming plate and steam for 20 minutes.
- Remove the chicken and let it cool to room temperature.
- Fry:
- Heat the oil, but do not overheat it.
- Fry the chicken well on both sides.
- Garnish and Serve:
- Garnish with tomatoes, lemon, onion, cucumber, and salad leaves.
- Sprinkle chaat masala and lemon juice on top.
